Food For Thought: Cinco de Mayo and the Avocado

Avocados offer a nutritious alternative to other condiments.

Yesterday, the WellBeingMD Center for Life celebrated Quatro de Mayo with a tasty, simple and nutritious Lunch and Learn provided by Chef Betsy Robinson and myself, Dr. John Principe.

Parallelling the  celebration of Mexcio from French dominance in the 1800's, participants also learned new and liberating information about how to prepare healthy mexican cuisine in short order.  The two featured menu items were  a quick  guacamole and a traditional pasta dish from Mexico, fideos.

Fideos features toasted angel hair pasta, fresh vegetables in a light broth.  In addition participants learned about all of the health benefits of the  avocado especially that they are a good source of healthy fats in the diet.

Adding an avocado to your next salad will increase the absorption of all the other phytonutrients (healthy colored veggies) by at least 200 percent.

The next time you reach to spread butter on your toast, think Avocado!
